Gān Lā Miàn are noodles without broth that you toss in sesame oil, soy sauce, chili paste and black vinegar. Garlic and scallions add aroma, and the vinegar brings acidity against the heat.

Ingredients
- 200 g noodles (preferably Chinese noodles)
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp chili paste
- 1 tsp black vinegar
- 2 scallions, finely chopped
- 2 garlic cloves, finely chopped
- 1 tsp toasted sesame seeds
- 1 tsp sugar
- Fresh cilantro for garnish
Instructions
- Cook the noodles according to the package instructions, drain and set aside.
- In a small bowl, mix the soy sauce, chili paste, black vinegar and sugar.
- Heat the sesame oil in a pan over medium heat. Add the garlic and scallions and fry until fragrant.
- Add the cooked noodles and the prepared sauce to the pan and stir well, until the noodles are evenly coated with the sauce.
- Take the noodles off the heat and divide between two plates. Garnish with toasted sesame seeds and fresh cilantro.
