Ingredients

  • 500 g shrimp, peeled and deveined
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 2 tsp sugar
  • 3 garlic cloves, finely chopped
  • 1 piece ginger (about 2 cm), finely chopped
  • 3 scallions, cut into rings
  • 1 red chili, seeded and cut into fine rings
  • 1 tbsp cornstarch, mixed with 2 tbsp water
  • 3 tbsp vegetable oil

Instructions

  1. Marinate the shrimp in a bowl with 1 tbsp soy sauce and the Shaoxing wine and set aside for 10 minutes.
  2. Heat the oil in a pan over medium heat. Add the garlic, ginger, scallions and chili and stir-fry briefly until fragrant.
  3. Add the marinated shrimp and fry over high heat, stirring constantly, until almost cooked.
  4. Add the sugar and the remaining soy sauce and stir well.
  5. Add the cornstarch mixture and simmer until the sauce thickens and coats the shrimp with a glossy sheen.
  6. Take off the heat and serve immediately.
