This is a traditional Korean dish of crabs marinated in a special soy sauce and eaten raw. Ganjang Gejang is known for its intense flavor and depth. It is a real treat for anyone who loves seafood.

Ingredients
- 4 live crabs (about 800 g), very fresh, sushi-grade
- 400 ml soy sauce
- 500 ml water
- 2 tbsp sugar
- 6 garlic cloves
- 1 piece of ginger (3 cm)
- 2 scallions
Instructions
- Freeze the live crabs for at least 24 hours at −18 °C (0 °F), or better at −20 °C (−4 °F), before marinating. Use only very fresh, sushi-grade crabs.
- Bring the soy sauce, water, sugar, garlic, ginger and scallions to a boil in a pot and simmer the marinade for 5 minutes. Then let it cool completely and refrigerate it.
- Thaw the crabs in the fridge and scrub them thoroughly under cold water.
- Place the crabs belly side up in a clean container and pour the cold marinade over them until they are covered. Cover and let them marinate in the fridge for at least 24 hours.
- Before serving, take the crabs out of the marinade and let them drain. Store any leftover crabs in the marinade in the fridge and eat them within 3 days of marinating.
- Serve with rice and kimchi.
