Dessert
Gao Dian, also called Chinese rice cake, is a traditional sweet pastry that Chinese families often serve at festivals and on special occasions. The cakes are soft, lightly sweet and pleasantly chewy.

Ingredients
- 200 g glutinous rice flour
- 50 g sugar
- 300 ml (1 1/4 cups) water
- 1 tsp baking powder
- 1 tbsp cooking oil
- Optional: red bean paste or sweetened lotus seed paste, for filling
Instructions
- Mix the glutinous rice flour, sugar and baking powder in a large bowl.
- Add the water slowly, stirring well, until you have a smooth dough.
- Work the oil into the dough until it feels soft and pliable.
- Divide the dough into small portions. If you like, press a little red bean or lotus paste into each portion as a filling.
- Roll the portions into balls and flatten them slightly.
- Place the cakes on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, until golden brown.
- Take the rice cakes out of the oven and let them cool on a wire rack.
