Salad
A refreshing, crunchy Vietnamese papaya salad enriched with the savory flavor of dried shrimp, topped with fresh herbs and a zesty lime dressing.

Ingredients
- 1 medium green papaya, peeled and cut into thin strips
- 50 g dried shrimp, soaked and roughly chopped
- 2 carrots, peeled and cut into thin strips
- 10 cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 bunch fresh cilantro, roughly chopped
- 1 bunch mint, leaves picked
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 2 garlic cloves, finely chopped
- 2 red chilies, seeded and finely chopped
- Roasted peanuts, for garnish
- Fried shallots, for garnish
Instructions
- Soak the dried shrimp in warm water for about 10 minutes, then drain and roughly chop them.
- Peel the green papaya and carrots and cut them into thin strips with a julienne peeler or a grater.
- Slice the red onion thinly and soak it in a bowl of cold water to take the edge off its sharpness, then drain.
- In a large bowl, combine the papaya strips, carrots, halved cherry tomatoes, chopped shrimp, and onion slices.
- For the dressing, stir the fish sauce, lime juice, sugar, chopped garlic, and chilies together well in a small bowl until the sugar dissolves.
- Pour the dressing over the salad and toss well.
- Garnish the salad with fresh cilantro, mint leaves, roasted peanuts, and fried shallots.
- Let the salad sit for about 10 minutes before serving so the flavors can develop.
