Salad
Gỏi Dưa Leo is a Vietnamese cucumber salad with shrimp, red onion, cilantro and mint. The dressing of fish sauce, lime and chili makes it salty and sour with a little heat, and the peanuts add bite. It works as a lunch or next to grilled meat.

Ingredients
- 2 large cucumbers, cut into thin slices
- 200 g cooked shrimp, peeled and deveined
- 1 small red onion, thinly sliced
- 1 handful fresh cilantro, roughly chopped
- 1 handful fresh mint, roughly chopped
- 2 tbsp chopped peanuts
- For the dressing:
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 1 garlic clove, finely chopped
- 1 small chili, deseeded and finely chopped
- 1 tsp toasted sesame oil
Instructions
- Put the cucumbers, shrimp and red onion in a large bowl.
- In a small bowl, stir together the fish sauce, lime juice, sugar, garlic, chili and sesame oil until the sugar has dissolved.
- Pour the dressing over the salad mixture and toss well.
- Add the cilantro and mint and toss again.
- Arrange the salad on serving plates and sprinkle with chopped peanuts.
- Let it sit for 10 minutes before serving so the flavors can develop.
