Guō Tiē are dumplings filled with ground pork and cabbage that you fry first and then steam in a covered pan. The bottom turns brown and crisp while the top of the dough stays soft. A dip of soy sauce and rice vinegar goes well with them.

Ingredients
- 200 g ground pork
- 100 g white cabbage, finely chopped
- 2 scallions, finely chopped
- 1 tbsp fresh ginger, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- Salt and pepper to taste
- 20 to 25 round dumpling wrappers
- 2 tbsp vegetable oil for frying
- 120 ml water
Instructions
- Put the ground pork in a large bowl.
- Add the cabbage, scallions, ginger and garlic.
- Add the soy sauce, sesame oil, sugar, salt and pepper and mix everything well.
- Put about 1 teaspoon of filling in the center of each dumpling wrapper.
- Moisten the edges with water, fold the wrapper over and press the edges firmly to seal.
- Heat the oil in a pan and fry the dumplings flat side down until the bottoms are golden and crisp.
- Add the water and cover the pan right away to steam the dumplings.
- Let them steam until all the water has evaporated.
- Transfer the dumplings to a plate and serve with soy sauce or a dip of your choice.
