Main Course
Gyeran Mari is a popular Korean rolled omelette, quick and easy to make, often served as a side in lunch boxes or as part of a traditional Korean breakfast. The omelette stays soft and fluffy, with finely chopped vegetables inside and sometimes a little meat for extra flavor.

Ingredients
- 4 large eggs
- 1/4 cup finely chopped carrot
- 1/4 cup finely chopped onion
- 2 scallions (green onions), finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
Instructions
- Crack the eggs into a bowl and beat them well.
- Add the carrot, onion and scallions to the beaten eggs.
- Season with the salt and pepper and mix thoroughly.
- Heat a large frying pan over medium heat and add the oil.
- Pour the egg mixture into the pan and spread it out evenly.
- As soon as the edges start to set, use a spatula to roll up the omelette carefully, starting from one side of the pan.
- Keep rolling until the whole omelette forms a tight roll.
- Take the omelette out of the pan and let it rest for a few minutes before slicing.
- Cut into slices and serve.
