Hột Vịt Lộn, called balut in the Philippines, is a fertilized duck egg with a partly developed embryo that you boil in its shell. You first drink the liquid from the egg and then eat the yolk and the duckling with salt. It tastes of egg yolk and chicken broth, and the duckling has a soft bite.

Ingredients
- 12 fertilized duck eggs
- 1 liter water
- 1 tsp salt
- 5 stalks fresh cilantro (optional)
- 2 tbsp chili sauce (optional)
Instructions
- Gently rinse the fertilized duck eggs to remove dirt without damaging the shells.
- Bring the water to a boil in a large pot.
- Carefully lower the eggs into the boiling water and cook for 25 minutes.
- Remove the eggs from the water with tongs and briefly dip them in cold water to stop the cooking.
- Place the eggs on a plate and sprinkle lightly with salt.
- Garnish with fresh cilantro if you like and serve with chili sauce.
