Hiyayakko is chilled silken tofu with scallions, ginger, bonito flakes and a splash of soy sauce. The tofu is soft and mild, and the toppings bring salt and heat. You serve it in summer as an appetizer or side dish.

- 1 tbsp grated fresh ginger
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp bonito flakes
- A few drops of Japanese chili sauce (optional)
- 4 sprigs fresh cilantro for garnish
Instructions
- Carefully take the silken tofu out of the package and cut it into four equal pieces.
- Place each piece of tofu on a small plate.
- Sprinkle the scallions and ginger over the tofu.
- Drizzle the soy sauce and sesame oil over the tofu.
- Sprinkle with bonito flakes and add a few drops of chili sauce if you like.
- Garnish with fresh cilantro and serve immediately.
