Hoi tod is a Thai pancake made from rice flour batter with mussels, scallions and bean sprouts. You fry it in oil until it is crispy outside and stays soft inside. A sweet and spicy chili sauce goes well with it.

Ingredients
- 200 g small mussels, cleaned
- 125 g rice flour
- 30 g cornstarch
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp sugar
- 1 egg
- 240 ml water
- 4 garlic cloves, finely minced
- 4 scallions, sliced
- 50 g bean sprouts
- 2 tbsp vegetable oil
- Optional: 2 tbsp chopped peanuts, 10 g fresh cilantro, 1/2 tsp chili flakes
Instructions
- Mix the rice flour, cornstarch, baking powder, salt and sugar in a bowl.
- Add the water, egg and garlic and stir into a smooth batter.
- Heat the oil in a large pan over medium heat.
- Add the mussels, scallions and bean sprouts to the batter and mix well.
- Pour half of the batter and mussel mixture into the hot pan and press it flat to form a thick pancake.
- Fry over medium heat for about 5 minutes, until the underside is crispy and golden, then flip and finish the other side.
- Take the pancake out of the pan and keep it warm. Repeat with the remaining batter.
- Cut the finished hoi tod into pieces and serve with optional toppings such as chopped peanuts, fresh cilantro and chili flakes.
