Hóng Shāo Miàn, or braised noodles, is a classic of Chinese cooking. It combines the savory flavors of soy sauce and star anise with the comfort of soft, well-seasoned noodles.

Ingredients
- 4 servings of noodles (such as udon or Chinese egg noodles)
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 garlic cloves, finely chopped
- 1 piece of ginger (about 2 cm / 3/4 in), finely chopped
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 star anise
- 500 ml vegetable broth
- 1 tsp sugar
- Scallions, to garnish
- Sesame oil, to drizzle
Instructions
- Cook the noodles according to the package instructions, drain them and set them aside.
- Heat the vegetable oil in a large pot or wok and stir-fry the onion, garlic and ginger over medium heat until soft and fragrant.
- Add the dark and light soy sauce and the star anise and stir well.
- Stir in the vegetable broth and sugar and bring to a boil.
- Add the cooked noodles to the sauce and toss everything well. Simmer over low heat for 10 minutes so the noodles absorb the flavors.
- Garnish with scallions and a drizzle of sesame oil and serve.
