Main Course
Hóng Shāo Miàn, or braised noodles, is a classic Chinese dish. It pairs the savory flavors of soy sauce and star anise with soft, well-seasoned noodles that make a comforting bowl.

Ingredients
- 4 servings noodles (such as udon or Chinese egg noodles)
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 garlic cloves, finely chopped
- 1 piece fresh ginger (about 2 cm), finely chopped
- 2 tablespoons dark soy sauce
- 1 tablespoon light soy sauce
- 1 star anise
- 500 ml (2 cups) vegetable broth
- 1 teaspoon sugar
- Scallions, for garnish
- Sesame oil, for drizzling
Instructions
- Cook the noodles according to the package directions, drain and set aside.
- Heat the vegetable oil in a large pot or wok. Fry the onion, garlic and ginger over medium heat until soft and fragrant.
- Add the dark and light soy sauce and the star anise and stir well.
- Stir in the vegetable broth and sugar and bring to a boil.
- Add the cooked noodles to the sauce and toss to coat. Simmer over low heat for 10 minutes so the noodles soak up the flavors.
- Garnish with scallions and a drizzle of sesame oil and serve.
