Main course
Hongshao rou fan is a classic of Chinese cooking: tender, slowly braised pork belly in an aromatic sauce, served over freshly cooked rice.

Ingredients
- 500 g pork belly
- 2 tbsp vegetable oil
- 2 tbsp sugar
- 3 tbsp soy sauce
- 1 tbsp dark soy sauce
- 2 star anise
- 1 cinnamon stick
- 2 scallions
- 3 slices ginger
- 3 garlic cloves
- 500 ml water
- Rice for 4 people
Instructions
- Cut the pork belly into pieces about 2 cm in size.
- Heat the oil in a pot and add the sugar until it caramelizes.
- Add the pork belly and brown it all over.
- Add the soy sauce, dark soy sauce, star anise, cinnamon stick, scallions, ginger and garlic and stir.
- Pour in the water so the meat is just covered, and bring to a boil.
- Reduce the heat and simmer for 1.5 to 2 hours, until the meat is very tender.
- Meanwhile, cook the rice according to the package directions.
- Serve the braised pork belly over the cooked rice.
