Hotteok are a traditional Korean street snack: a sweet yeast dough filled with a sugary nut mixture, then pressed flat and fried. They come out crisp outside, with a sweet, sticky center.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup warm water
- 1/4 cup milk
- 1/4 cup sugar
- 1/2 tsp salt
- 1 tsp active dry yeast
- 1 tbsp vegetable oil, plus extra for frying
- 1/2 cup brown sugar
- 1/4 cup chopped walnuts
- 1/4 cup chopped peanuts
- 1 tsp ground cinnamon
Instructions
- In a large bowl, mix the flour, sugar, salt and yeast.
- Add the warm water and milk and knead into a smooth dough. Work in the oil, cover the dough and let it rise in a warm place for about 1 hour.
- For the filling, mix the brown sugar, walnuts, peanuts and cinnamon in a small bowl.
- Divide the risen dough into 8 equal pieces.
- Flatten each piece, put a tablespoon of filling in the center and pinch the dough closed over it so the filling is fully sealed.
- Heat a lightly oiled pan over medium heat and place the hotteok in it seam side down. Press them flat until they are about 1/2 inch (1 cm) thick.
- Fry the hotteok for 3-4 minutes per side, until golden brown and crisp.
- Drain the hotteok on paper towels and serve warm.
