Main dish
Hújiāo Bǐng is a popular Taiwanese street food: crisp buns filled with juicy, peppery pork. The buns are crisp on the outside and soft on the inside, with a savory filling.

Ingredients
- 500 g ground pork
- 1 tsp salt
- 2 tsp freshly ground black pepper
- 1 tsp soy sauce
- 1 tsp sesame oil
- 2 scallions, finely chopped
- 1 garlic clove, finely chopped
- 300 g all-purpose flour
- 1 tsp baking powder
- 120 ml warm water
- 2 tsp sugar
- 1 tsp yeast
- Oil for frying
Instructions
- Mix the flour, baking powder, sugar and yeast in a bowl. Add the warm water and knead to a smooth dough. Cover and let it rise for 1 hour.
- Mix the ground pork with the salt, pepper, soy sauce, sesame oil, scallions and garlic.
- Divide the dough into 8 equal pieces and roll each piece into a flat disk.
- Place a tablespoon of the meat mixture in the center of each disk, pull the edges up and seal them well.
- Fry the filled buns seam side down in a little oil until golden brown on both sides.
- Finish baking the buns over medium heat for about 10 minutes, until the meat is cooked through.
