Main course

Ikayaki is a Japanese street snack of squid rings that you sear in a hot grill pan and glaze with teriyaki sauce. The sauce of soy sauce, mirin and sake tastes sweet and salty, and ginger and garlic add depth. In half an hour it is on the table as a quick meal or finger food.

Ingredients

  • 1 large squid, cleaned and cut into rings
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tsp sugar
  • 1/2 tsp ginger, grated
  • 1 garlic clove, finely chopped
  • 2 tbsp vegetable oil
  • Sesame seeds, for garnish
  • Scallions, for garnish

Instructions

  1. Make the teriyaki sauce by mixing the soy sauce, mirin, sake, sugar, ginger and garlic well in a small bowl.
  2. Wash the squid thoroughly and pat dry.
  3. Preheat a grill pan over high heat and add the oil.
  4. Put the squid rings in the hot pan and grill for 2-3 minutes on each side, until lightly browned.
  5. Pour the teriyaki sauce over the squid and grill for 2 more minutes, turning once, so the squid is evenly coated with the sauce.
  6. Put the grilled squid on a plate and garnish with sesame seeds and scallions.
  7. Serve immediately.
