Janchi guksu, which literally means 'banquet noodles', is a traditional Korean noodle soup often served at celebrations such as weddings or big feasts. This light but hearty soup consists of thin wheat noodles in a clear broth, topped with an assortment of fresh ingredients.

Ingredients
- 200 g wheat noodles (somyeon)
- 1.5 liters chicken stock
- 2 eggs
- 1 medium zucchini, cut into thin strips
- 2 scallions, finely chopped
- 1 carrot, cut into thin strips
- 150 g kimchi, roughly chopped
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt to taste
- Sesame seeds, for garnish
- Seaweed, cut into strips, for garnish
Instructions
- Cook the noodles according to the package instructions, rinse them under cold water and set aside.
- Bring the chicken stock to a boil in a large pot. Reduce the heat and keep it at a gentle simmer.
- In a separate pan, heat the sesame oil and lightly sauté the carrot and zucchini strips. Set aside.
- Crack the eggs and fry them in a flat pan as a thin omelet. Once cooled, cut into thin strips.
- Add the soy sauce to the chicken stock and season with salt.
- Divide the cooked noodles among four bowls. Pour the hot broth over them.
- Top each bowl with zucchini, carrot, egg strips, scallions, kimchi and seaweed.
- Sprinkle with sesame seeds and serve the soup warm.
