Main course
Jeonbokjuk is a traditional Korean rice porridge made with abalone. You cook the innards along with it, which turns the porridge slightly green and gives it a strong taste of the sea.

Ingredients
- 2 fresh abalone, cleaned and cut into thin slices
- 200 g glutinous rice, washed and soaked
- 1.4 l water
- 2 scallions, finely chopped
- 2 garlic cloves, chopped
- 1 tsp sesame oil
- Salt to taste
- Pepper to taste
- 1 tsp soy sauce (optional)
Instructions
- Rinse the rice in a sieve and let it soak for at least 1 hour.
- Cut the abalone into thin slices. Remove the innards and set them aside.
- Bring the water to a boil in a large pot. Add the soaked rice and simmer over medium heat for 30 minutes.
- Add the abalone and the innards and simmer for another 30 minutes, until the abalone is tender.
- Add the garlic, scallions, sesame oil, salt and pepper. Stir and simmer over low heat for another 20 minutes.
- Season with soy sauce and adjust to taste.
- Serve hot and enjoy.
