Ingredients

  • 1 kg pork ribs, cut into pieces
  • 2 tbsp cornstarch
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 4 garlic cloves, finely chopped
  • 1 scallion, thinly sliced
  • Vegetable oil for deep-frying

Instructions

  1. Toss the ribs with the cornstarch in a bowl until every piece is evenly coated.
  2. Heat plenty of oil in a deep pan or pot.
  3. Fry the ribs in batches until golden brown and crispy. Each batch takes about 5-7 minutes.
  4. Drain the fried ribs on paper towels.
  5. Pour off the excess oil, leaving about two tablespoons in the pan.
  6. Stir-fry the garlic and scallion in the remaining oil until fragrant.
  7. Add the salt and pepper and mix well.
  8. Return the fried ribs to the pan and toss until the seasoning coats them evenly.
  9. Arrange the ribs on a plate and serve immediately.
