Snack
Jumeokbap are Korean rice balls, traditionally served as a snack or as part of a meal. They are easy to make and can be adapted in many ways with different fillings and sides.

Ingredients
- 320 g cooked rice, cooled
- 1 carrot, finely diced
- 1/2 cucumber, seeded and finely diced
- 2 scallions, finely sliced
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tsp sesame seeds
- Salt and pepper to taste
- 1 sheet nori, cut into small strips
Instructions
- In a large bowl, mix the cooled rice with the carrots, cucumber, and scallions.
- Add the sesame oil, soy sauce, sesame seeds, and salt and pepper and mix well.
- Take a small amount of the rice mixture and, with wet hands, shape balls about the size of a golf ball.
- Repeat until all the mixture is used.
- Garnish the rice balls with nori strips and serve right away, or pack them for a quick snack on the go.
