Ingredients

  • 320 g cooked rice, cooled
  • 1 carrot, finely diced
  • 1/2 cucumber, seeded and finely diced
  • 2 scallions, finely sliced
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp sesame seeds
  • Salt and pepper to taste
  • 1 sheet nori, cut into small strips

Instructions

  1. In a large bowl, mix the cooled rice with the carrots, cucumber, and scallions.
  2. Add the sesame oil, soy sauce, sesame seeds, and salt and pepper and mix well.
  3. Take a small amount of the rice mixture and, with wet hands, shape balls about the size of a golf ball.
  4. Repeat until all the mixture is used.
  5. Garnish the rice balls with nori strips and serve right away, or pack them for a quick snack on the go.
