Main course
Kai Tod is a popular Thai dish of marinated fried chicken. It is crisp on the outside and juicy on the inside, with a rich blend of spices.

Ingredients
- 1 kg chicken pieces (such as thighs, wings)
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tsp sugar
- 4 garlic cloves, finely chopped
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp turmeric
- 1 tbsp lime juice
- Vegetable oil for deep frying
- Fresh cilantro to garnish
Instructions
- Clean the chicken pieces and pat them dry.
- In a large bowl, mix the soy sauce, oyster sauce, sugar, chopped garlic, pepper, salt, turmeric and lime juice into a marinade.
- Turn the chicken pieces in the marinade so every piece is evenly coated.
- Cover the marinated chicken and let it sit in the fridge for at least 2 hours.
- Heat the oil to 170 °C (340 °F) in a deep pot or deep fryer.
- Fry the chicken pieces in batches in the hot oil for about 8 to 10 minutes, until golden brown and crisp.
- Drain the fried chicken on paper towels to remove excess oil.
- Garnish with fresh cilantro and serve.
