Dessert
Kanom krok is a traditional Thai dessert of small, sweet coconut pancakes. They are typically made in a special kanom krok pan with half-sphere-shaped wells. The pancakes are crisp on the outside and soft and creamy inside.

Ingredients
- 125 g rice flour
- 50 g sugar
- 1/2 tsp salt
- 240 ml coconut milk
- 120 ml water
- 50 g chopped scallions
- 40 g freshly grated coconut
- 1 tsp baking powder
- Oil for greasing the pan
Instructions
- Mix the rice flour, sugar and salt in a large bowl.
- Add the coconut milk and water and stir well until you have a smooth batter.
- Add the baking powder and stir well again.
- Heat the special kanom krok pan over medium heat and lightly grease the wells with oil.
- Spoon about a tablespoon of batter into each well.
- Sprinkle scallions and grated coconut over the top of each pancake.
- Cook the pancakes for about 2 to 3 minutes, until the edges are golden brown and crisp.
- Carefully lift the pancakes out and arrange them on a serving plate.
- Serve hot.
