Kanom Krok is a traditional Thai dessert of small, sweet coconut pancakes. Cooks make them in a special kanom krok pan with half-sphere wells. The pancakes come out crisp on the outside and soft and creamy inside.

Ingredients
- 1 cup rice flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup coconut milk
- 1/2 cup water
- 1/2 cup chopped scallions
- 1/2 cup freshly grated coconut
- 1 teaspoon baking powder
- Oil for greasing the pan
Instructions
- In a large bowl, mix the rice flour, sugar and salt.
- Add the coconut milk and water and stir until you have a smooth batter.
- Add the baking powder and stir again.
- Heat the kanom krok pan over medium heat and lightly oil the wells.
- Spoon about 1 tablespoon of batter into each well.
- Sprinkle scallions and grated coconut over the top of each pancake.
- Cook the pancakes for 2-3 minutes, until the edges turn golden and crisp.
- Lift the pancakes out with care and arrange them on a serving plate.
- Serve hot.
