Dessert
Kanom Tuay is a Thai dessert that you steam in small cups. The bottom is a sweet layer of rice flour and coconut milk, the top a salty coconut cream. Both layers are soft like pudding, and the salt on top brings out the sweetness.

Ingredients
- 160 g rice flour
- 30 g tapioca flour
- 480 ml coconut milk
- 180 ml water
- 100 g sugar
- 1/4 tsp salt
- 240 ml coconut milk for the top layer
- 1 tsp salt for the top layer
- 1 tbsp sugar for the top layer
Instructions
- Mix the rice flour, tapioca flour, sugar and 1/4 tsp salt in a bowl.
- Add the water and 480 ml coconut milk and stir until the batter is smooth.
- Pour the batter into small heatproof cups.
- Steam the cups for about 10 minutes, or until the bottom layer sets.
- In another bowl, mix the remaining coconut milk with 1 tsp salt and 1 tbsp sugar.
- Carefully pour this mixture over the cooked bottom layer in the cups.
- Steam the cups for another 5 minutes, or until the top layer sets.
- Let the cups cool before serving.
