Ingredients

  • 1 whole chicken (about 1.5 kg)
  • 400 g jasmine rice
  • 1 bunch cilantro
  • 1 cucumber, sliced

For the broth:

  • 1.5 liters water
  • 2 garlic cloves
  • 3 slices of ginger
  • 2 scallions
  • 1 tsp salt

For the ginger sauce:

  • 100 g ginger
  • 5 garlic cloves
  • 3 chili peppers
  • 1 tbsp sugar
  • 3 tbsp soy sauce
  • 2 tbsp vinegar

Instructions

  1. Pat the chicken dry with paper towels. Don't wash it, or you spread germs around the kitchen. Put it in a large pot with water, add the garlic, ginger, scallions and salt and bring everything to a boil.
  2. Simmer the chicken over low heat for about 45 minutes until cooked through: at the thickest part of the thigh it reads at least 75 °C, and the juices run clear. Then take the chicken out and let it cool.
  3. Wash the rice and cook it in 560 ml of the chicken broth until tender.
  4. For the ginger sauce, finely chop the ginger, garlic and chilies and mix them in a small bowl with the sugar, soy sauce and vinegar.
  5. Cut or shred the cooked chicken into pieces.
  6. Arrange the cooked rice on plates, put the chicken over it and garnish with cilantro. Lay the cucumber slices on the side.
  7. Serve the ginger sauce separately.
