Main dish
Khao Mok Pla is a Thai specialty that pairs yellow rice with fragrant fish. The dish is rich in spices and offers a delicious take on the popular Khao Mok (Thai biryani).

Ingredients
- 400 g white jasmine rice
- 600 ml coconut milk
- 2 tsp turmeric
- 1 tsp curry powder
- 1 tsp salt
- 4 fish fillets (e.g. tilapia or cod)
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, finely chopped
- 1 thumb-sized piece of ginger, finely chopped
- 2 stalks lemongrass, lower part only, finely chopped
- 4 cardamom pods
- 2 bay leaves
- Fresh cilantro for garnish
Instructions
- Wash the jasmine rice thoroughly and let it drain.
- Heat the vegetable oil in a large pot and sauté the onion, garlic, ginger and lemongrass until soft and fragrant.
- Add the turmeric, curry powder and salt and fry briefly until the spices release their aroma.
- Add the rice and stir well so the spices coat the rice evenly.
- Add the coconut milk, cardamom pods and bay leaves, stir well and bring to a boil.
- Once the coconut milk boils, reduce the heat and simmer the rice for 10 minutes.
- Lay the fish fillets on top of the rice, put the lid on and cook everything together for another 15 minutes, until the rice is tender and the fish is fully cooked.
- Before serving, remove the cardamom pods and bay leaves and garnish the dish with fresh cilantro.
