Khao Pad Tom Yum is Thai fried rice with shrimp that you season with tom yum paste. The lemongrass, galangal, and chili in the paste make it sour and hot, and lime at the table adds freshness. It is a good way to use up day-old rice.

Ingredients
- 600 g cooked rice, preferably a day old
- 200 g shrimp, peeled and deveined
- 2 tbsp tom yum paste
- 1 tbsp fish sauce
- 1 tsp sugar
- 2 scallions, cut into pieces
- 1 red bell pepper, diced
- 100 g button mushrooms, sliced
- 2 tbsp vegetable oil
- A few leaves of fresh cilantro for garnish
- 1 lime, cut into quarters
Instructions
- Heat the oil in a large pan or wok over high heat.
- Add the shrimp and fry until almost cooked through. Take them out of the pan.
- In the same pan, add the tom yum paste and fry for about 1 minute.
- Add the red bell pepper and mushrooms and fry for a few minutes, until soft.
- Add the cooked rice, fish sauce, and sugar. Stir well and fry everything together for about 5 to 7 minutes, until the rice is hot.
- Return the shrimp to the pan and mix everything well.
- Remove from the heat and stir in the scallions.
- Serve with fresh cilantro and lime quarters.
