Khao tom mud is a traditional Thai dessert of sweet sticky rice with a banana in the middle, wrapped in banana leaves and then steamed. It is popular as a snack or a sweet breakfast and pairs creamy banana with fragrant sticky rice.

Ingredients
- 200 g sticky rice, soaked overnight
- 200 ml coconut milk
- 100 g sugar
- 1/2 tsp salt
- 4 small bananas
- Banana leaves, for wrapping
- Toothpicks, for closing the packets
Instructions
- Drain the soaked sticky rice and put it in a bowl.
- Heat the coconut milk in a pot, add the sugar and salt and stir until dissolved.
- Pour the coconut milk mixture over the sticky rice and stir well. Cover and let it swell for about 20 minutes.
- Cut the banana leaves into square pieces and soften them lightly over steam so they become flexible.
- Spread some sticky rice on each banana leaf, lay a banana on top and shape the rice around the banana.
- Wrap the banana leaf tightly around the rice and banana and close it with a toothpick.
- Steam the packets in a steamer over boiling water for about 45 minutes, until the rice is fully cooked.
- Let cool slightly before serving.
