Dessert
Khao Tom Mud is a traditional Thai dessert: sweet sticky rice with a banana in the middle, wrapped in banana leaves and steamed. Thais eat it as a snack or a sweet breakfast. You get soft, creamy banana inside fragrant coconut rice.

Ingredients
- 200 g glutinous (sticky) rice, soaked overnight
- 200 ml (generous 3/4 cup) coconut milk
- 100 g sugar
- 1/2 teaspoon salt
- 4 small bananas
- Banana leaves, for wrapping
- Toothpicks, to close the parcels
Instructions
- Drain the soaked sticky rice and put it in a bowl.
- Heat the coconut milk in a saucepan, add the sugar and salt and stir until dissolved.
- Pour the coconut milk mixture over the rice and stir well. Cover and leave for about 20 minutes so the rice soaks it up.
- Cut the banana leaves into squares and soften them briefly over steam so they turn pliable.
- Spoon some of the sticky rice onto each banana leaf, lay a banana on top and shape the rice around it.
- Wrap the banana leaf tightly around the rice and banana and secure it with a toothpick.
- Steam the parcels over boiling water for about 45 minutes, until the rice is fully cooked.
- Let them cool a little before serving.
