Kimchi Jeon is a Korean pancake made with well-aged kimchi. You mix a batter of wheat and rice flour and fry it in a pan until crisp. It tastes tangy and spicy and works as a snack, a side dish or a light meal.

Ingredients
- 150 g well-fermented kimchi, roughly chopped
- 3 tbsp kimchi juice
- 120 ml water
- 125 g all-purpose flour
- 30 g rice flour
- 1/2 tsp salt
- 2 scallions, thinly sliced
- 1 small squid, optional, cleaned and cut into small pieces
- Vegetable oil for frying
Instructions
- Mix the all-purpose flour, rice flour and salt in a large bowl.
- Add the water and kimchi juice and stir to a smooth batter.
- Stir in the chopped kimchi, the scallions and the squid, if using.
- Heat a little oil in a large pan over medium heat.
- Put a large spoonful of batter in the pan and spread it into a round pancake.
- Fry the pancake for 3-4 minutes on each side, until golden brown and crisp.
- Repeat with the remaining batter.
- Serve the kimchi jeon hot and fresh.
