The combination of udon noodles, the savoriness of dashi powder, the sweetness of mirin and salty soy sauce gives the dish a rich umami flavor. Good for a comforting lunch or dinner, it is often garnished with sesame seeds and fresh chives, which add a nutty note and extra freshness.
