Seolleongtang is a traditional Korean oxtail soup that simmers for a long time, until the meat is tender and the broth turns milky white. This hearty, nourishing dish is especially popular in the cold months.

Ingredients

  • 1 kg oxtail
  • 2 liters water
  • 1 large onion, halved
  • 4 garlic cloves
  • 2 scallions, chopped
  • 1 tsp black pepper
  • Salt to taste
  • cooked rice, to serve

Instructions

  1. Wash the oxtail thoroughly and put it in a large pot.
  2. Add water to cover the oxtail and bring to a boil. Skim off the foam carefully.
  3. Add the onion, garlic cloves and black pepper. Reduce the heat and simmer over low heat for 6 hours, until the broth is milky white.
  4. Take the meat out of the pot, let it cool and pull the meat off the bones.
  5. Pour the soup through a fine sieve and skim off the fat.
  6. Return the meat to the soup and season with salt.
  7. Heat the soup and garnish with scallions. Serve with cooked rice.
