Side dish
For these miso onions you slowly fry onion rings until golden brown and glaze them at the end with miso, mirin, soy sauce and honey. The Japanese-inspired side dish tastes sweet and salty at once. Serve it with grilled meat or fish, on a bowl of rice or in a ramen soup.

Ingredients
- 4 large onions (about 800 g)
- 2 tbsp vegetable oil
- 3 tbsp light miso paste (fermented soybean paste)
- 1 tbsp honey
- 2 tbsp mirin (sweet Japanese rice wine)
- 1 tbsp soy sauce
- 3 tbsp water plus a little for deglazing
- 1 tsp freshly grated ginger
- 1 garlic clove
- 2 scallions for garnish
- 1 tbsp toasted sesame seeds for garnish
Instructions
- Peel the onions and cut them into rings 1 cm thick.
- Heat the oil in a large pan over medium heat. Fry the onions for 5 minutes, stirring, until they collapse.
- Turn the heat to medium-low and fry the onions for another 25 minutes, until soft and golden brown. Stir every 3 to 4 minutes and loosen the browned bits on the bottom of the pan with 1 tbsp water.
- Meanwhile, whisk the miso, honey, mirin, soy sauce and 3 tbsp water smooth in a small bowl. Grate the ginger and finely chop the garlic.
- Add the ginger and garlic to the onions and fry for 1 minute, until fragrant.
- Turn the heat to low, pour in the miso mixture and stir for 2 to 3 minutes, until the liquid has reduced and the onions are glossy. Stay at the stove, because miso and honey burn quickly.
- Cut the scallions into thin rings, scatter them and the sesame over the onions and serve warm.
