Main dish
Kuay Tiew Kua Gai is wide rice noodles that you stir-fry in a wok with chicken and egg until the edges brown. Soy sauce and fish sauce make the dish salty, and garlic and white pepper add depth.

- 200 g wide rice noodles
- 200 g chicken breast, cut into strips
- 2 large eggs
- 2 scallions, cut into pieces
- 2 garlic cloves, finely chopped
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
- 1 pinch ground white pepper
- Optional: 1/2 tsp chili flakes
Instructions
- Prepare or soak the rice noodles according to the package instructions.
- Heat the oil in a large pan or wok.
- Fry the garlic in the hot oil until fragrant.
- Add the chicken strips and fry until almost cooked through.
- Add the noodles and keep frying.
- Crack the eggs over the noodles and wait until they start to set, then stir everything together well.

- Fold in the scallions and stir-fry briefly.
- Garnish with fresh cilantro and sprinkle with chili flakes if you like.
