Là Jiāo Yú is a popular Chinese dish of fresh fish in a spicy chili sauce. This recipe combines tender fish fillets with a fragrant mix of chilies, garlic and ginger.

Ingredients
- 4 medium fish fillets (e.g. cod, tilapia)
- 2 tbsp soy sauce
- 1 tbsp rice wine or dry sherry
- 2 tsp cornstarch
- 3 tbsp vegetable oil
- 4 scallions, cut into rings
- 3 garlic cloves, finely chopped
- 2 inch fresh ginger, finely chopped
- 10 fresh red chilies, deseeded and cut into thin rings
- 1 tsp sugar
- Salt to taste
- Fresh cilantro for garnish
- Cooked rice for serving
Instructions
- 1. Season the fish fillets lightly with salt, marinate with the soy sauce and rice wine, add the cornstarch and mix well. Let rest for 10 minutes.
- 2. Heat the oil in a large pan or wok. Add the fish fillets and fry for 2-3 minutes on each side, until golden brown. Remove from the pan and set aside.

- 4. Add the scallions, sugar and a pinch of salt and fry for 1 more minute.
- 5. Return the fried fish to the wok, coat it well with the sauce and simmer everything together for 2-3 minutes to bring the flavors together.
- 6. Garnish with fresh cilantro and serve hot with cooked rice.
