Mandu guk is a hearty, warming Korean soup made with filled dumplings (mandu) and a clear, filling broth. This dish is especially popular during Korean New Year, but you can enjoy it all year round as a nourishing meal.

Ingredients
- 200 g mandu (Korean dumplings, frozen or fresh)
- 1 liter beef broth
- 1 tbsp soy sauce
- 2 scallions, cut into rings
- 1 garlic clove, finely chopped
- 1/2 tsp sesame oil
- 2 eggs, beaten
- 1/2 tsp ground black pepper
- 1 tsp sesame seeds
- Optional: 1 tsp gochugaru (Korean red pepper flakes)
Instructions
- Bring the beef broth to a boil in a large pot.
- Add the soy sauce and garlic and let it simmer over medium heat.
- Add the mandu to the simmering broth and cook for about 10 minutes, or until fully cooked.
- Add the scallions and optional gochugaru and cook for another 5 minutes.
- Reduce the heat and slowly pour the beaten eggs into the soup, stirring constantly to form egg ribbons.
- Turn off the heat, stir in the sesame oil and season with black pepper.
- Serve the soup hot and sprinkle with sesame seeds.
