Side dish

For these miso onions you fry onion rings slowly until golden and glaze them at the end with miso, mirin, soy sauce and honey. The Japanese-inspired side dish tastes sweet and salty at once. Serve them with grilled meat or fish, spoon them over a bowl of rice or add them to a bowl of ramen.

Ingredients

  • 4 large onions (about 800 g)
  • 2 tablespoons vegetable oil
  • 3 tablespoons white (shiro) miso paste (fermented soybean paste)
  • 1 tablespoon honey
  • 2 tablespoons mirin (sweet Japanese rice wine)
  • 1 tablespoon soy sauce
  • 3 tablespoons water, plus a little extra for deglazing
  • 1 teaspoon freshly grated ginger
  • 1 garlic clove
  • 2 scallions (green onions) to garnish
  • 1 tablespoon toasted sesame seeds to garnish

Instructions

  1. Peel the onions and cut them into 1 cm thick rings.
  2. Heat the oil in a large frying pan over medium heat. Fry the onions for 5 minutes, stirring, until they collapse.
  3. Turn the heat down to medium-low and cook the onions for another 25 minutes, until soft and golden brown. Stir every 3 to 4 minutes and loosen anything stuck to the bottom of the pan with 1 tablespoon of water.
  4. Meanwhile, stir the miso, honey, mirin, soy sauce and 3 tablespoons of water in a small bowl until smooth. Grate the ginger and finely chop the garlic.
  5. Add the ginger and garlic to the onions and cook for 1 minute, until fragrant.
  6. Turn the heat to low, pour in the miso mixture and stir for 2 to 3 minutes, until the liquid has cooked down and the onions look glossy. Stay at the stove: miso and honey burn fast.
  7. Slice the scallions into thin rings, scatter them over the onions with the sesame seeds and serve warm.
