Mitarashi Dango are glutinous rice dumplings that you thread onto skewers, grill and glaze with a sauce of soy sauce, mirin and sugar. The glaze tastes sweet and salty and picks up a toasty flavor on the grill. In Japan you buy them at snack stands and at festivals.

Ingredients
- 200 g shiratamako (sweet rice flour) or mochiko
- 240 ml water
- 1 pinch of salt
- 4 wooden skewers
For the sauce:
- 100 ml soy sauce
- 100 ml mirin
- 2 tbsp sugar
Instructions
- In a medium bowl, mix the shiratamako, salt and water until smooth.
- Divide the dough into small portions and shape them into small balls.
- Cook the balls in a pot of boiling water until they rise to the surface.
- Thread the cooked dango onto wooden skewers, 3 to 4 balls per skewer.
- For the sauce, heat the soy sauce, mirin and sugar in a small pot over medium heat until the sugar has dissolved completely.
- Let the sauce cool slightly, then pour it over the dango.
- Grill the dango with the sauce, turning occasionally, until lightly caramelized.
