Moo Ping is a popular Thai street snack of marinated pork grilled on skewers. The meat comes out fragrant and a little sweet, good as a snack or a side.

Ingredients

  • 500 g pork neck (pork collar), cut into strips 1-2 cm thick
  • 2 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp fish sauce
  • 1 tsp white pepper
  • 2 tbsp palm sugar, crushed
  • 4 garlic cloves, finely chopped
  • 1 tbsp oil, plus extra for brushing
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix the pork well with the dark and light soy sauce, fish sauce, white pepper, palm sugar and garlic.
  2. Cover the meat and marinate it in the fridge for at least 4 hours.
  3. Soak the wooden skewers in water so they don't burn on the grill.
  4. Thread the marinated pork onto the soaked skewers.
  5. Preheat the grill and cook the skewers over medium heat. Brush them with a little oil as they grill to keep the meat from drying out.
  6. Turn the skewers often until the pork is cooked through and lightly caramelized.
  7. Arrange the grilled Moo Ping on a plate and serve hot.
