Main course
Moo Tod Nam Pla is a simple, popular Thai dish in which pork is marinated and then fried until crisp. The fish sauce gives the meat a salty, umami-rich edge.

Ingredients
- 500 g pork belly, cut into strips
- 3 tbsp fish sauce
- 1 tsp sugar
- 2 garlic cloves, finely chopped
- 1/2 tsp black pepper
- 2 tbsp vegetable oil for frying
- Fresh cilantro for garnish
- 2 red chilies, sliced into rings (optional)
Instructions
- Marinate the pork belly strips in a bowl with the fish sauce, sugar, chopped garlic and black pepper. Let them marinate in the fridge for at least 1 hour.
- Heat the vegetable oil in a pan over medium to high heat.
- Add the marinated pork belly strips to the hot pan and fry until golden brown and crisp on both sides, about 5 to 7 minutes per side.
- Lay the fried meat on paper towels to remove excess oil.
- Arrange the pork on a plate and garnish with fresh cilantro and, if you like, red chilies.
