Salad

Mu Saengchae is a traditional Korean salad of thinly cut radish in a spicy dressing. The crunchy radish meets a hot, sweet and sour marinade. Serve it as a side with grilled meat or as part of a Korean spread.

Ingredients

  • 1 large Korean radish (or white radish/daikon), peeled and cut into matchsticks
  • 1 tablespoon salt
  • 2 tablespoons Korean chili powder (gochugaru)
  • 1 tablespoon sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 2 garlic cloves, finely chopped
  • 1 scallion (green onion), thinly sliced
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Toss the radish strips with the salt and let them sit for 10 minutes to draw out water.
  2. Squeeze the water out of the radish and put it in a large bowl.
  3. In a small bowl, mix the chili powder, sugar, cider vinegar, soy sauce, sesame oil and chopped garlic to make the dressing.
  4. Pour the dressing over the radish and mix thoroughly.
  5. Add the sliced scallion and mix again.
  6. Sprinkle with toasted sesame seeds and let the salad stand for at least 15 minutes before serving so the flavors can develop.
