Drinks
Nam Matum is a Thai tea made from dried bael fruit, which you simmer with cinnamon and cloves for 45 minutes. It tastes sweet and toasty, a bit like caramel, and the spices add warmth. Drink it hot or chilled over ice.

Ingredients
- 10 dried bael fruits
- 1 liter water
- 50 g sugar
- 2 cinnamon sticks
- 5 cloves
Instructions
- Wash the bael fruits thoroughly and cut them in half.
- Bring the fruit to a boil in a large pot with 1 liter of water.
- Add the cinnamon sticks and cloves.
- Reduce the heat and simmer the tea for 45 minutes.
- Pour the tea through a fine sieve into a large pitcher to remove the solids.
- Add sugar to taste and stir until it dissolves completely.
- Serve the tea hot, or chill it in the fridge for a cold drink.
