Nam Matum is a Thai tea made from dried bael fruit, which you simmer with cinnamon and cloves for 45 minutes. It tastes sweet and toasty, a bit like caramel, and the spices add warmth. Drink it hot or chilled over ice.

Ingredients

  • 10 dried bael fruits
  • 1 liter water
  • 50 g sugar
  • 2 cinnamon sticks
  • 5 cloves

Instructions

  1. Wash the bael fruits thoroughly and cut them in half.
  2. Bring the fruit to a boil in a large pot with 1 liter of water.
  3. Add the cinnamon sticks and cloves.
  4. Reduce the heat and simmer the tea for 45 minutes.
  5. Pour the tea through a fine sieve into a large pitcher to remove the solids.
