Main course
Nam Tok Moo is a popular Thai salad that tosses grilled pork with a mix of fresh herbs and seasonings. 'Nam tok' means 'waterfall', a nod to the sound of the meat juices dripping onto the fire as the pork grills.

Ingredients
- 500 g pork neck (pork collar)
- 2 tablespoons fish sauce
- 1 tablespoon dark soy sauce
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 3 shallots, thinly sliced
- 3 scallions (green onions), thinly sliced
- 1 handful fresh cilantro (coriander), roughly chopped
- 1 handful mint, leaves picked
- 1/2 cup toasted rice, coarsely ground
- 2-4 Thai chilies, chopped, to taste
- Lettuce leaves, for serving
Instructions
- Cut the pork neck into even slices.
- Sear the meat on all sides in a pan or on a grill until well browned and cooked through.
- Slice the cooked pork thinly and put it in a large bowl.
- In a small bowl, mix the fish sauce, soy sauce, lime juice and sugar until the sugar dissolves.
- Pour the dressing over the sliced pork and mix well.
- Add the shallots, scallions, cilantro, mint and chilies and toss everything together.
- Sprinkle the toasted rice over the top and toss again.
- Arrange the salad on lettuce leaves and serve right away.
