Ingredients

  • 1 medium napa cabbage, roughly chopped
  • 2 garlic cloves, finely chopped
  • 1 piece ginger (about 2 cm), finely chopped
  • 1 liter (4 cups) vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 scallions (green onions), sliced into rings
  • Salt, to taste
  • Pepper, to taste
  • Optional: tofu or cooked chicken, cut into pieces

Instructions

  1. Heat the sesame oil in a large pot.
  2. Add the garlic and ginger and fry over medium heat for about 2 minutes, until fragrant.
  3. Add the cabbage and let it cook for about 5 minutes, until slightly wilted.
  4. Add the vegetable broth, soy sauce and the tofu or chicken (if using) and bring to a boil.
  5. Lower the heat and let the soup simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Ladle the soup into bowls and garnish with the scallions.
