Main course
Nasi Ambeng is a traditional Javanese dish: a large mound of rice served with side dishes such as chicken, boiled eggs, tempeh, tofu and vegetables. People serve it at special occasions and gatherings, and everyone eats from the same platter.

Ingredients
- 300 g basmati rice
- 600 ml (2 1/2 cups) water
- 2 chicken thighs
- 200 g tempeh
- 200 g firm tofu
- 2 hard-boiled eggs, halved
- 100 g fresh spinach
- 100 g bean sprouts
- 2 tbsp soy sauce
- 2 tbsp peanut oil
- 1 tsp ground turmeric
- 2 garlic cloves, finely chopped
- 1 onion, finely diced
- Salt and pepper to taste
Instructions
- Cook the rice according to the package directions, adding the turmeric to the cooking water for a golden color.
- Heat the peanut oil in a pan and cook the onion and garlic until translucent.
- Add the chicken thighs and brown them on all sides, then add a little water, cover and simmer over medium heat for 45 minutes.
- Cut the tempeh and tofu into cubes and fry them in a separate pan with a little oil until crisp. Deglaze with the soy sauce.
- In a third pan, briefly stir-fry the spinach and sprouts in a little oil until they wilt.
- Mound the cooked rice on a large platter. Arrange the braised and fried components around the rice.
- Use the halved eggs as a garnish.
