Nasi goreng Pattaya is fried rice from Malaysia that you wrap in a thin omelet. The rice contains chicken, shrimp, carrot and bell pepper, seasoned with soy sauce and oyster sauce. In Malaysia you usually eat it with ketchup or chili sauce.

Ingredients
- 320 g cooked rice
- 100 g chicken breast, finely diced
- 50 g shrimp, peeled and deveined
- 2 garlic cloves, finely chopped
- 1 small onion, diced
- 1 carrot, cut into small cubes
- 1/2 red bell pepper, diced
- 2 eggs
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp white pepper
- 2 tbsp vegetable oil
- Salt to taste
- 2 sprigs cilantro, leaves picked, for garnish
- 1 scallion, cut into rings
Instructions
- Heat 1 tbsp of the vegetable oil in a pan over medium heat.
- Add the garlic and onion and fry until soft.
- Add the chicken breast and shrimp and fry until cooked.
- Add the carrot and bell pepper and fry everything for a few minutes.
- Add the cooked rice, soy sauce, oyster sauce, sesame oil and white pepper. Stir well and fry the rice until hot and well mixed. Set the rice aside.
- Beat the eggs in a bowl and season them with a pinch of salt.
- Heat the remaining tablespoon of oil in a large pan over medium heat. Pour in the eggs to form one large omelet.
- When the omelet is almost set, spread the fried rice over one half. Fold the omelet over the rice to enclose it.
- Leave the omelet in the pan for another 1-2 minutes, then slide it onto a plate.
- Garnish the nasi goreng Pattaya with the scallion and fresh cilantro leaves.
