Ingredients

  • 320 g cooked rice
  • 100 g chicken breast, finely diced
  • 50 g shrimp, peeled and deveined
  • 2 garlic cloves, finely chopped
  • 1 small onion, diced
  • 1 carrot, cut into small cubes
  • 1/2 red bell pepper, diced
  • 2 eggs
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp white pepper
  • 2 tbsp vegetable oil
  • Salt to taste
  • 2 sprigs cilantro, leaves picked, for garnish
  • 1 scallion, cut into rings

Instructions

  1. Heat 1 tbsp of the vegetable oil in a pan over medium heat.
  2. Add the garlic and onion and fry until soft.
  3. Add the chicken breast and shrimp and fry until cooked.
  4. Add the carrot and bell pepper and fry everything for a few minutes.
  5. Add the cooked rice, soy sauce, oyster sauce, sesame oil and white pepper. Stir well and fry the rice until hot and well mixed. Set the rice aside.
  6. Beat the eggs in a bowl and season them with a pinch of salt.
  7. Heat the remaining tablespoon of oil in a large pan over medium heat. Pour in the eggs to form one large omelet.
  8. When the omelet is almost set, spread the fried rice over one half. Fold the omelet over the rice to enclose it.
  9. Leave the omelet in the pan for another 1-2 minutes, then slide it onto a plate.
  10. Garnish the nasi goreng Pattaya with the scallion and fresh cilantro leaves.
